Who doesn’t love pancakes? It’s so easy to make them vegan and fluffy. Brad Maule, of General Hospital fame, joins The Vegan Guy in Nacogdoches, Texas, the home of the Texas Blueberry Festival. So, of course, we make blueberry pancakes.

Frickin’ Awesome Blueberry Pancakes
2 cups non-dairy milk (add more as required for proper consistency)
2 “eggs”= Ener-G Egg Replacer*, two small bananas (mashed very well), or 3/4 cup applesauce
1 Tablespoon oil
1-1/4 cups unbleached flour
1-1/2 teaspoons of baking powder
1 teaspoon baking soda
1 teaspoon sugar
1/4 teaspoon salt
1 1/2 cups blueberries

Stir together liquids in one bowl. In another, sift together flour baking powder, baking soda, sugar and salt. Combine. Mix gently. Pour onto a pre-heated, non-stick pan.
Flip when bubbles start to stay open.

Keep oven on “warm” until you have a stack and are about to freak out because you want them so much.

Makes: 6-14 pancakes, depending on how ridiculous a size you make them.

* Regarding Ener-G Egg Replacer- For each egg use one tbsp powder and two tbsp water. Important- Stir very well BEFORE adding to batter.
